- Yellow Onion – 2 medium, finely chopped
- Garlic – 6 cloves, minced
- Fresh Ginger – 2-inch piece, grated
- Olive Oil – 4 tablespoons
- Cumin Seeds – 2 teaspoons
- Ground Coriander – 2 teaspoons
- Ground Turmeric – 1 teaspoon

Instructions:
Sauté: Set your Instant Pot to sauté mode.
- Add 4 tablespoons of olive oil.
- Once the oil is hot, add 2 teaspoons of ground cumin.
- When the cumin starts to splutter, add 2 finely chopped green chilies (optional), 2 medium diced onions, 2-inch grated fresh ginger, and 6 minced garlic cloves.
- Sauté for about 4 minutes until the onions turn light brown.
Prepare Tomato-Cashew Paste: While the onions are sautéing, blend 4 medium tomatoes and ½ cup of cashews (if using) into a smooth paste.
Cook Tomato Paste and Spices:
- Add the tomato-cashew paste to the Instant Pot.
- Stir in 2 teaspoons each of ground turmeric, ground coriander, ground cinnamon, ground cardamom, ground cloves, and ground nutmeg.
- Add 2 teaspoons of garam masala and salt to taste.
- Cook for 3-4 minutes, stirring occasionally, until the oil begins to separate from the masala.
Pressure Cook: Close the lid of the Instant Pot and set it to manual or pressure cook mode on high for 3-4 minutes. Once the cooking cycle is complete, perform a quick release of the pressure.
Serve: Serve the Matar Paneer hot with steamed basmati rice or warm naan bread. Top with cilantro and extra cashews.
